Coconut Pineapple Squares
Ingredients

tablespoon butter
1 tablespoon sugar
1 cup sifted flour
3 teaspoons Rumford Baking Powder
1/4 teaspoon salt
3 eggs, well beaten
1 cup crushed pineapple (drained)
3/4 cup sugar
2 tablespoons butter (melted)
1 1/2 cups moist shredded coconut
Instructions
Cream 1 tablespoon butter and 1 tablespoon sugar. Sift flour, Rumford Baking
Powder and salt together and add to creamed mixture and stir until crumbly.
Add half the beaten eggs and mix well. Spread in greased 8-inch square pan and
cover with drained pineapple.
Mix 3/4 cup sugar, melted butter and coconut, add remaining eggs and blend well. Spread over top of pineapple. Gently press topping into pineapple. Bake in moderate oven (350° F.) 30-35 minutes. When cool, cut into squares.
Makes 1 1/2 dozen small squares
